This is my to-go recipe for delicious hummus. Makes a wonderful dip or spread for sandwiches and you can eat it even as a side dish or own its own, with veggies like cucumbers, apio or bell peppers.

Ingredients

  • 2 can(s) chickpeas, drained and rinsed
  • 1 large lemon, juice
  • 10 cloves of garlic, minced
  • 2 tbsp ground cummin
  • 5 tbsp extravirgine olive oil
  • 5 tbsp Tahini (sesame paste)
  • 1 tbsp smoked paprika or cayenne pepper

Directions

Keep a quarter of the liquid from the can of chick peas.

Wash the chick peas under a flush of water.

Add them into the food processor and drizzle the olive oil and the lemon juice. Pulse until the consistency looks smooth, then scrape the sides of the food processor and add in the tahini paste, and the minced garlic. Adjust the consistency with more olive oil or lemon juice, depending oh how thick or thin you want it.

Spread in a serving dish, swirling it with back of a spoon. Pour extravirgine olive oil in the centre and garnish with veggies (sliced cucumbers or bell pepper). Sprinkle some paprika or chayenne pepper for slight hotness.
