Fried Corn

6-8 large ears of sweet corn, cleaned, rinsed, and kernels

removed from cob

1 green peppers, diced

1/2 cup all -purpose flour

1 tablespoon granulated sugar

Salt & pepper to taste

1/2 cup vegetable shortening

Combine corn kernels, green pepper, flour, sugar, salt and pepper. Toss to evenly coat veget ables.

Heat the shortening until hot. Carefully add the corn mixture and fry until the corn is tender

and starts to brown. St ir frequently to prevent sticking
