No-Crust Sweet Potato Pie

4 Sweet potatoes, medium sized, peeled, cooked and mashed

1 c Sugar

1/2 c All-purpose flour

1/2 c Butter or margarine; softened

1 Egg

3/4 tsp almond extract

Whipped cream

Combine the sweet potatoes, sugar, flour, butter, egg and almond extract in a large mixing bowl;

beat at medium speed of electric mixer until well blended. Spoon mixture into a 9-inch pie plate.

Bake at 450 degrees F. for 25 minutes or until lightly browned. Serve warm or cool with a dollop of

whipped cream. Makes one 9-inch pie
