Lemon Poppy Seed Cake

2 3/4 cups of flour

2 1/4 teaspoons of baking powder

1 teaspoon of baking soda

1/2 teaspoon of salt

1 cup of unsalted butter

1 3 /4 cups of sugar

5 eggs, separated

The zest of 2 lemons

1 cup of buttermilk

2 teaspoons of vanilla

1/3 cup of poppy seeds

Preheat the oven to 350 degrees. Butter and flour a baking tin. Sift together the dry

ingredients. Beat the butter at medium spee d until light and fluffy and add the sugar, and

the egg yokes one at a time beating well. Add the vanilla, lemon rind, the dry ingredient

mixture, the buttermilk, and the poppy seeds.

Beat the egg whites to medium peaks and add to batter. Bake in the lower 1/3 of the oven

for 55 minutes. Cool in the baking tin for 10 minutes then invert onto a rack. Sprinkle with

confectioners sugar.
