1 tablespoon minced garlic 2 teaspoons olive oil
1/4 cup chicken broth 2 tablespoons lemon juice
2 tablespoons orange juice 1 teaspoon salt
1 teaspoon pepper 2 tablespoons cold unsalted butter, cut into small pieces
In a saucepan sauté the garlic in the olive oil over moderately high heat until browned. Add the
chicken broth, the lemon and orange juice, salt and pepper and cook until reduced by half, then swirl
in the butter.
