Old-Fashioned Potato Salad

9 cups of cubed unpeeled round red potato (about 3 lbs.)

1/2 cup of diced onion

1/2 cup of diced celery

1/4 cup of sweet or dill pickle relish

3 Hard-boiled eggs, sliced

1 clove garlic, minced

3/4 cup of sour cream

1/3 cup of mayonnaise

2 tablespoons of chopped fresh parsley

1 teaspoon of dry mustard

3/4 teaspoon of salt

1/4 teaspoon of black pepper

Place the potatoes in a large pot, cover with water, and bring to

a boil. Cook for about 8 minutes or until tender and drain. put

the cooked potatoes in a large bowl with the onion, celery, pickle

relish, and the sliced eggs and mix gently. Combine sour cream,

garlic, mayonnaise, parsley, dry mustard, salt, and black pepper

in a small bowl and stir until mixed well. Pour the sour cream

mixture over the potatoes and gently toss to coat. Cover and chill.
