Recipe DetailsSummaryName: Lynn's Green Marsala Category: Rice Ingredients and Directions10 each zucchini, shredded 3 each potatoes, shredded 1 each onion, shredded 1 each tomato, diced finely 1 each green jalopeno, shredded 1 each red jalopeno, shredded 1 each red banana pepper, shredded 1 each yellow banana pepper, shredded 1 pk spinach, thawed, chopped, squeezed 2 tablespoon balsamic 1 each lime juiced 1 garlic gloves, minced (to taste) 1 ginger, minced (to taste) 1 cn v-8 juice, or tomato juice 1 teaspoon coriander 1 teaspoon tumeric 1/2 teaspoon cardomom 1/2 teaspoon cinnamon 1 cilantro leaves (to taste) Start with garlic and ginger, saute in some balsamic, add onion, add jalopeno and peppers. Then add potato and zucchini, as it needs liquid add v-8 to consistency you like. Add spinach. Season with above spices. At the very end throw in the cilantro leaves. Serve on top of basmati rice with wheat berries (use 2 c rice to 1 c wheat berries or bulgar wheat). It is very hot and spicy and tastes wonderful. |
