1 tablespoon butter

1/4 cup all-purpose flour

3 cup milk, low-fat (1%)

1 teaspoon salt

1/2 teaspoon pepper

1 nutmeg, pinch

3/4 cup parmesan cheese, grated

1 pound fettuccine, cooked

Melt butter. Add flour; cook, stirring, 1 minute. Whisk in milk, salt, pepper and nutmeg. Bring to boil, whisking; reduce and simmer, stirring occasionally, 5 minutes. Toss with cheese and cooked pasta.
