Ingredients and Directions

1 each onion, sliced

1 teaspoon curry powder

2 tablespoon oil

1 teaspoon salt

1 teaspoon black pepper, ground

2 pound beef, stew meat, cut in 1/2 inch cubes

2 cup liquid, use beef broth, water and/or liquid drained from canned fruit, your choice

2 cup fruit, use apples, pears, canned pineapple chunks, raisins or any fruit you prefer, cut into bite-size pieces

1 rice, hot, cooked

   

   

---CONDIMENTS---

1 onions, green, chopped

1 coconut, grated, unsweetened

1 peanuts, chopped

1 chutney

In a large Dutch oven, saute onion and curry powder in oil over medium heat until onion is soft. Remove onions from pan. Increase heat to medium-high and brown beef (in batches, if necessary). To the crock pot, add onions, beef, salt, pepper and liquid(s). Cover and cook on LOW for 6-8 hours. About 1/2 hour before serving time, add fruit(s). You may thicken stew with cornstarch mixture, if liquid is too thin. Serve over hot rice with your choice of condiments.
