Recipe DetailsSummaryName: Low-Fat Oatmeal Muffins Category: Baked Goods Ingredients and Directions1 cup flour 1/4 cup bran, (natural unprocessed bran) 1/4 teaspoon nutmeg 1/2 teaspoon cinnamon 1/2 teaspoon baking soda 1 tablespoon baking powder 1 cup oatmeal, (any kind) 1 cup applesauce, unsweetened 3/4 cup milk, nonfat 1/2 cup raisins, or any dried fruit, cut in small pieces 1 each egg, OR 2 egg whites, or 1/4 c egg substitute Heat oven to 400 degrees and spray a muffin tin with cooking spray. In a bowl, mix first six ingredients and dump out on a paper plate. In the same bowl, mix the remaining ingredients and let sit for 5 minutes. Stir in previously mixed dry ingredients just until completely mixed. Fill muffin cups almost full. Bake for 20 to 22 minutes or until a toothpick inserted in a muffin comes out clean. Remove muffins from pan and cool on a wire rack. |
