Easy Fried Rainbow Trout

2 pounds of rainbow trout fillets

1 teaspoon of salt

1/8 teaspoon of black pepper

1 egg

1 teaspoon of ilk

1/2 cup of flour

1/2 cup of cornmeal

Cooking oil

Mix the flour and cornmeal in a large plate or shallow pan.

Sprinkle the fillets or whole trout inside and out with salt and

pepper. Beat egg and blend in the milk. Dip the fish in the egg

and milk mixture and roll in flour and cornmeal mixture. Place

fish in frying pan with 1/8 inch cooking oil. Cook on moderate

heat until golden brown on both sides (approximately 10 minutes

depending on thickness of fish.
