3 cups of white beans
3/4 pound of fresh salt pork
1 tablespoon of prepared mustard
1 teaspoon of ground gi nger
2 tablespoons of molasses
Salt and Black Pepper to taste
1 tablespoon of brown sugar
Soak the bean overnight. Rinse and d rain in the morning. Cover with cold water, boil for 15
minutes and drain. Put the beans in a buttered baking dish and add the other ingredients.
Place the salt pork in the beans with the rind exposed and cover with boiling water. Bake co vered
at 300 degrees for 6 hours. Remove the cover for the last 30 minutes to brown.
