Stewed Rhubarb

1 lb Fresh rhubarb, cut into

1-inch pieces

1/2 c Sugar

Add rhubarb to a saucepan with a small amount of water and simmer for 5 minutes. Add sugar and simmer for an additional 5 minutes or until sugar is dissolved. This is great in ice cream, with plain low-fat yogurt, on pancakes, with custard or all by itself.
