This is a good alternative to whole eggs for those who need to watch their diets.

· 3 egg whites

· 2 T. instant nonfat dry milk powder

· 1 tsp. water

· 2 to 3 drops yellow food coloring (optional)

In a small bowl, combine all ingredients; mix well. Use as a substitute for eggs.

Yields 1 serving (equivalent to 2 eggs).

Diabetic exchanges: 1 very lean meat, 1/2 skim milk
