2 lb. frozen hash brown potatoes

2 tablespoons of onion, minced

1/2 cup of butter or margarine, melted

1 can cream of chicken soup

1 tsp. salt 1 pint low-fat sour cream

1/2 teaspoon of black pepper

2 cups of grated cheddar cheese

Mix all ingredients together in a large bowl and pour into

a 13x9x2-inch baking dish. Bake at 350 degrees for 1 hour.
