Pineapple Casserole

1 large can pineapple tidbits, drained

1 cup sugar

2 Tbsp. cornstarch

2 eggs beaten

1/2 to 1 cup cheddar cheese, grated

cinnamon

butter

Grease a 9" baking dish. Mix cornstarch and sugar. Add eggs, pineapple and cheese. Pour into

baking dish. Sprinkle top with cinnamon. Dot with butter. Bake at 350 degrees for 40 mins. Good

with ham. Note: Do not double this recipe as it seems to not thicken properly. Make two separate

casseroles in necessary.
