3 eggs
1 cup of vegetable oil
2 cups of sugar
2 cups of peeled and grated zucchini
1 teaspoon of vanilla
1/4 teaspoon of baking powder
1 cup of pecans
3 cups of flour
1 teaspoon of salt
1 teaspoon of baking soda
3 teaspoons of cinnamon
Beet the eg gs, sugar, and the vegetable oil together. Then add the vanilla and stir in the graded
zucchini. Sift the flour, salt, cinnamo n, baking soda, and the baking powder together and stir
into the egg/sugar mixture. Mix in the pecans and pour into two well gr eased loaf pans. Bake
at 325 degrees for 60 to 70 minutes.
