A fresh twist on the classic dessert Tiramisu.
Prepare cookies as follows:
Preheat oven to 375 degrees F. Prepare baking sheets with parchment paper, or spray with nonstick baking spray.
Place butter in a small saucepan over medium heat, stirring ocasionally until melted. In a large bowl, whisk together the 2 eggs, 3/4 cup sugar, brown sugar, the butter(let cool slightly before mixing in), and vanilla.
In a separate bowl, whisk together the dry ingredients (salt, flour, baking soda). Incorporate the dry ingredients into the wet ingredients. Stir in 2 cups of chocolate chips.
Scoop about a tablespoon of dough onto the prepared cookie sheet. Make sure to keep dough roughly the same size to ensure that the top of the cookie sandwich is the same size as the bottom. Bake the cookies about 13 to 15 minutes, or until golden brown. Let cookies sit on the pan to continue cooking after pulling them out of the oven, then transfer to a cooling rack.
To make the tiramisu filling:
Add 1 tablespoon of heavy whipping cream and 1/8 a cup of chocolate chips to a small saucepan. Cook over medium heat, stirring periodically, until the chocolate chips are melted. Set aside.
In a glass bowl, whisk 1/8 cup of sugar, the egg yolks, and a pinch of salt together. Prepare a saucepan of simmering water, and whisk the egg mixture over the saucepan about 4 minutes, or until the mixture is creamy. Make sure that the bottom of the bowl does not touch the water. Fold the melted chocolate into the egg mixture. Cover and chill.
While it chills, beat the 1/3 cup heavy whipping cream and 1/8 cup of the sugar with an electric or stand mixer until soft peaks form. Then fold this into the mascarpone cheese. Once mixed, fold in the chilled chocolate mixture.
