Rhubarb Muffins

1 1/4 cups of brown sugar

1/2 cup of vegetable oil

1 egg

1/2 cups of milk

1 teaspoons of vinegar

2 teaspoons of baking soda

1/2 teaspoon of salt

2 1/2 cups of flour

2 teaspoon of vanilla extract

1 1/2 cups of rhubarb, cut up

For the topping:

1/2 teaspoon of cinnamon

1/2 cup of sugar

1 tablespoon of butter

Grease a muffin pan or line with paper baki ng cups. Mix the first 3 ingredients together and

add the dry ingredients alternately with the milk. Add the vanilla extract an d rhubarb, and stir by

hand. Fill muffin cups 3/4 full. Top with topping mixture. Bake at 350 degrees for 20 -25 minutes.
