Orange Nut Bread

1 orange

1 cup of raisins

1 cup of pecans

1 cup of hot orange juice

1 teaspoon of baking soda

1 cup of sugar

1 teaspoon of vanilla

1 beaten egg

2 cups of flour, sifted

1 teaspoon of baking powder

1/4 teaspoon of salt

Using a sharp knife, peel the outer rind from the orange. Grind the orange rind, raisins, and the

pecans using the finest blade on a food processor and transfer to a bowl. Pour in the hot

orange juice, mix in the baking soda, sugar, vanilla, egg, and the flour sifted with the baking

powder and salt. Mix well and pour into a greased loaf pan and bake for 50 minutes at 350 degrees.
