1 cup of instant oats
2 cups water
1 pkg. Dry yeast
1/4 cup of warm water
1/2 cup of molasses or instead use 1/3 cup honey
2 teaspoon of salt
1 tablespoon of butter or vegetable oil
5-1/2 cups of white flour, approximately
Bring the 2 cups of water to a boil and pour over the oats and let sit for 15 minutes. In another bowl
stir the yeast into 1/4-cup warm water and let sit for 5 minutes until dissolved. Make sure the oats are
still lukewarm and add the molasses or honey, salt, butter, and the yeast. Next start working in
enough flour so the dough is easy to handle. On a lightly floured board put the dough and knead for a
minute or two and let rest for 10 minutes. After the 10 minutes start kneading until the dough is
smooth and elastic adding more flour as needed. Place the dough into a greased bowl and cover.
Put the bowl in a warm spot and let the dough rise until double in bulk. After the dough has risen to
twice it’s size punch down and shape into 2 loaves and place in buttered loaf pans and let rise again
until the are doubled in size. Then in a preheated oven of 375 bake the bread for 45 minutes. Remove
from pans and let cool.
