1/4 cup plus 2 tablespoons of butter, softened
1 cup of sugar
2 eggs
1 1/2 cups of all-purpose flour
1 teaspoon of baking powder
A pinch of salt
1/2 cup of milk
2 teaspoons of lemon rind
1 cup of blueberries
2 teaspoons of all-purpose flour
Glaze:
1/3 cup of sugar
3 tablespoons of lemon juice
Cream the butter and 1 cup of sugar together. Add the eggs. Combine 1 1/2 cups of the flour, baking
powder, and the salt together and add to butter and sugar mixture alternately with the
milk. Stir in the lemon rind. Dredge the blueberries in flour and stir gently into the batter. Pour the
batter into a greased loaf pan and bake at 350 degrees for 50 to 55 minutes.
While the bread is baking, combine 1/3 cups of sugar and the lemon juice in a small saucepan and
heat until the sugar dissolves. After the bread has finished baking, puncture the top of the loaf with a
fork and pour the sugar and lemon sauce over the top of the warm bread. Cool the bread in the pan
for 30 minutes before serving.
